exhaust: can't really help you as i have not done anything yet either.
sharking: do it now. the exhaust and k&n will not affect the tuning of the
chip according to turner motorsports (http://www.turnermotorsports.com).
they told me that you do not need a specially burned chip for these
improvements. the chip is great as it increase the rev limiter and helps
flatten out the torque curve across the rev band. i am glad i did it! a
cool thing about the rev limit increase is that (with my 3.91 diffs) i can
almost reach 60mph in second gear, you should be able to with a 3.73 (i
believe - correct me if i'm wrong). that will improve acceleration as you
won't have to shift to 3rd to hit 60 - you may not now though, i don't know.
of course 0-60 is not the only thing to worry about, general drivability is
greatly improved. my advice: do it.

i am not sure which wheels you are talking about but be aware that you have
a 4 bolt hub where as all newer 3 series models (E36, E46) and all 5, 6, 7,
& 8 series use a 5 bolt pattern. so does the E30 M3 (again, someone correct
me if i'm wrong). depending on your budget, check out the wheel rack at the
tire rack (http://www.tirerack.com) for various fitments with pictures to
see how they might look on your car.
i hope this helps you. i am no expert but i have looked into some of these
things myself. you, fortunately, have more options than i do. the iX has
huge offsets which eliminates the ability to use a lot of other wheels. it
also has a lot of specific parts which do work from/with other E30's.
