I never heard of 1750 cranks being Nitrided. Perhaps that's just a Euro
thing. I'm not entirely sure I understand your question. Are you debating
which engine to put in the '75 GTV you have, or is another car being
considered? The 1750 and 2000 cranks are not interchangeable, if that's 
what you're asking. The 2000 is the correct motor for a '75 GTV. Us poor
American slobs got the Alfetta that year. If you are preparing a car for
vintage racing, one essential thing to do is check with the club you 
intend to race with regarding engine swap rules. FYI, you can have a
crank Nitrided, if necessary. On the Nitrided ones, watch out for the
crank plugs. The early 2000 motors with Nitrided cranks are notorious for
low oil pressure caused by crank plugs falling out. For racing purposes,
You should spend the $$ to have all the oil plugs replaced with screw-in
plugs. Drilling and tapping a Nitrided crank is not a trivial job. It
should be done by a competent machinist who has done them before.

I'll leave the Giulia Sprint GT Veloce vs. GTV debate to the historians.
It appears to me the name changed around the time the 2000 came out. My
car is a Tipo 10536, Giulia Sprint GT Veloce, complete with tacky green
on white quadrifoglio at the C-pillar.
