With the 4 bar your describe, a Watt link would be better.  It attaches to
the diff at the center and would allow more articulation.  Another problem
with the Panhard rod for off road is that the motion of the wheels would
not be the same.  The left and right would differ.  Fine for highway use
but not for extreme travel.

4-bar with Watt Link should do just fine off or on road.  You're right
about the different arcs causing binding.
