It's very common on E30's (and other models) to have the temp gauge 
malfunction...the nut on the rear of the gauge that grounds it properly often 
loosens or corodes thus causing the gauge to act weird...try tapping the side 
of the instrument panel next time the needle climbs into the red and see if 
the needle moves back down.

Removal of the panel is easy, if that's your problem.  Your BMW mechanic was 
doing the right thing....my mechanic actually told me the head was going 
bad....he was waaaaay off...the gauge was the problem....check it out.
