You might check to ensure that your coollant pump is working
OK. Since you are adding a LOT of heat to the system on the
track, you must have enough flow to move the heat. This is a
bit of physics that guys who try runnig from the police (no
connection intended here of course) tend to forget. The cops
usually catch up when the other guy overheats. A pump with a
flow rate that is only slightly marginal would act as you
descibe, since the flow would be perfectly adequate for normal
driving, but at racing speed thermal runaway would cause the
temp to rise in a flash. The only other thing that comes to
mind is that maybe the engine is leaning out at high boost,
and causing a temp. spike. Good luck.
