My local Alfa garage reckoned that there are two rubber bungs, which are
fitted into the channel in which the hood/bonnet fits, on either side of the
car which prevent engine-warmed (?) air getting into the aircon sensors....
And if they're missing, your aircon will be erratic.

At the time I thought he might be mad, but I'm passing this on, in case it's
any use for you!
