This is one of those "wives tales" that probably evolved out of the fact
that an engine run with little or no exhaust back pressure will exhibit a
shift in the power curve.  The changes depend on the engine and its design,
but sometimes the changes are negative (less torque for example).  But
running a stock engine without an exhaust isn't going to hurt anything
except your ears... and maybe the hot exhaust might fry a few things in
close proximity to the engine if exposed long enough.
