Brad,
Unlike the front bearing replacement, rear E30 bearings are a poor candidate
for a DIY job. You need the bearing puller, air tools and likely a grinder
if the old bearing separates as you were pulling it out (more likely with
badly worn bearings like yours). 
I watched my mechanic swear through 3 hours of what should have been an hour
long rear bearing job. With all of the above tools!

You need only one inner bearing for the rear. 
Not sure what 'new wheel bearing nuts' are.
