I don't think you will find it any louder. Our Euro spec Non-Emissions E30
325i has never had a cat fitted, and just has a straight pipe where it would
have been I think (There are two mufflers, one long one under the car with
two inlets and outlets, and the rear one - also with dual pipes in and out.
The car is quiet, but just loud enough to have meaning :-).
Friends of mine have removed the catrs from there japanese cars, and the
cars never got louder... well not in a bad way. Just a little more noise,
but it sounds better.
