Congrats on your purchase and welcome to the list.  The switch
next to the shifter allows you to select which shifting mode you prefer.
Our 89 535i has three choices E(Economy), S(Sport) and M(Manual).
(Yours is probably similar.)
Normal mode is economy, and auto shift points are optimized for economy.
Sport mode is for more "enthusiastic" driving, and shifting occurs=20
at higher RPMs.
Manual allows you to actually use the shift lever to shift from 1st, to
2nd, etc.  (Also good for "un-stucking" yourself from snow, ice, mud, =
etc.)
The tranny will not "auto" shift until you tell it to do so (much
like a clutchless manual transmission).
I'm happy to send/fax computer pages from the owner's manual
if you give me the details off-line, but you may want to check out
TMC Publications <www.tmcpubl.com> and order your own manual for
a nominal price.
I believe orange is oil and yellow tranny fluid, but whichever
one pulls out with red fluid is going to be your tranny fluid.
I'll let others opine on your oil question.
