Maximum braking should be done at the highest speed possible. This 
allows the most airflow over the pads/calipers/rotors while they are 
generating the most heat. As the car slows down - begin easing off the 
brakes. This is a "secret" of most good endurance racers. 

Something else to think about - don't focus so much on late braking and 
"going deep". Concentrate on entering the turn with the car settled and 
at maximum speed.
