Offset, was bolt pattern...

Okay, I've found out that my bolt pattern is not the problem, in fact it
is a very common one.  The problem is with the quirky offset the E30
has--20 mm versus the 35-40mm that ALL the wheels I like have.  What can
be done about this?  Machining the wheel's hub?  Purchasing an offset
adapter?  Or running the wheel with a severly different offset?  What
problems would this cause?  Would the wheel stick out to far or would it
be just the opposite?
