Mike, my '79 Alfetta GTV had an adjustable thermostatic switch for the fan.
I believe it may have been aftermarket, but it had a copper sensing line
sandwiched between the top radiator hose and it's boss on the engine. The
switch was clamped/zip-tied to the hose but could easily be hidden somewhere
else.
It had a simple screw adjuster to vary the open/close temperature of the
switch. I added another switch in the cabin to enable manual bypass so I
could run both the aircon and radiator fans at any temp.
I'm sure a speedshop would sell a similar thermo switch.
