None of this means anything unless you know how accurate your gauge is.

If there are bad connections to the sensors, the gauge will give a false
high readings (better think you have a problem when you really don't,
then to not think you have a problem when you really do).

You shouldn't need a lower temp thermostat if your cooling system is in
good condition.  Find some place that can measure the actual coolant
temp before you do anything else, chances are it's not the same as what
your gauge is telling you.

The gauge is really only useful for noticing that something changes.  If
it reads 250 every day, and you don't have steam coming out from under
your hood, then chances are you don't need a special thermostat.

One thing to try is to clean the connection to the temp sender, and see
how that affects the gauge readings.
