Head gasket questions

Greetings Alfisti,

I just pulled the cylinder head on my 74 GTV last night to replace the head 
gasket.

Can anyone tell me exactly how clean I need to make the sealing surfaces 
?  If I scrape it off and use some acetone I can get it to where it feels 
very smooth, but it still is discolored ( blackish or brownish ).   Or 
should I bite the bullet and have it resurfaced ?  If so can I just remove 
the cams and leave the valves in ?
