You mention that the car has been converted to carbs, but
not whether this is a recent development or if it used
to run fine.  If it has NEVER run well, I'd make sure that
a) you have the proper low-pressure fuel pump and/or 
pressure regulator, and
b) that the jetting is appropriate for a 1750 as most 
converted cars were 2 liters (though this is likely to
be a bigger issue when driving, not idling)
