Re: Dremel, Makita, Bosch, Foredom, etc. and osso buco

Tony Lupton asks "John, you didn't inadvertantly slap in a extra "0" did you?"

No, there may have been a misprint in the catalog, but it says 350,000 rpm,
the model number is 350K and, since there are high-quality 25,000 rpm
electric die-grinders listed for $105, I would expect the air turbine unit
would need more than 10,000 more rpm to justify the $300 price ($400 list).

Tony goes on, "Of course, bringing together Scott Fisher's kitchen theme, and
this one,--"

The obligatory footnote to Scott's kitchen theme is that a shank is the leg
from knee to ankle, in Italian 'gamba' or 'tibia', and 'buco' is a hole,
orifice, aperture, cavity; 'osso buco' is marrow-bone, short pieces of the
shank. Marrow is 'midollo'. An 'osso gamba' would not be the same as an 'osso
midollo'. The meat is indeed delectable, but the marrow is at the core of the
recipe.

cordially,

John, salivating with the rest -
