My GTV was running hot for a very long time.  It had a new engine (broken
in), boiled out radiator, Haynes electric fan (spec'ed for a 3 litre engine)
wired constantly on, and good coolant mixture.  The thermostat was correct
and the bias valve that goes to the water pump was replaced (actually
placed.  I bought the car without one).  I had a bubble in the coolant
system.  I'd suggest draining and refilling the system.  While you have it
down, it might not be a bad idea to have the radiator boiled out by a
specialist.  It doesn't cost that much and I've always been able to drop it
off after work and pick it up in the morning.
