I sent out a message last Thursday, but it disappeared into a black hole.
The 2 1969 1750 GTVs I have owned (1 purchased by me in 1969 in Montreal,
the other originally from the Netherlands) came with the same seats you
describe.

My 68 German 1750 GTV has buttress seats and the passenger seat only has a
headrest which is built into the seatback itself.  A knob on the inner side
of
the seat raises or lowers the top part of the seatback up and down inside
the
butresses using a rack and pinion type system. The adjustment knob is not
the
typical round knob, but more like a t-handle.   With the headrest adjusted
down, the seat appears to not have a headrest.
