I drive past a firm at 101 Queens Rd Five Dock called Original Dashboards
on the way between work locations.  This company always seem to have
expensive cars on its premises so I guess this may reflect that they are
good at their job.  Unfortunately I have no personal experience with this
company or any other that I can pass on.

 Alternatively you can look on page 2026 of the L-Z Sydney Yellow pages and
you will find a number of firms advertising dash restorations under Motor
Body Trimmers.
