No real reason I guess, except that 10" is the recommended size, and most 
people seem to run 10" rims, and I'm buying new rims rather than trying to reuse
smaller rims. I think either would work, as long as the backspacing is correct.
A friend of mine had terribly reduced turning radius when he put 35x12.5s on 
8" rims, and it got much better when he switched to 10" rims. I'm assuming 
that the problem he had with the 8" rims was due to incorrect (too much) 
backspacing, and that his 10" rims have less.
