How about setting up some kind of form which people could fill out regarding
their experiences with individual vendors?  Do not leave space for comment,
only check boxes.  How many times they've ordered from that vendor, time frame
of last order, how they rate things like helpfulness, delivery, quality on a
scale of 1 to 10, what type of item they purchased, etc. You could either post
the results as averaged scores for each vendor (like online polls that
tabulates responses), or maybe post the individual forms that everyone
submits, including their name and email address so that if they gave a vendor
a particularly bad rating, they could be contacted personally for all the
details.  That eliminates vendor flaming on your site, yet still allows the
collection of the basic information you wish to provide.
Just a thought.  Seems like a happy medium to me.
