HDs are longer then Sports and thus can be used with the stock springs.
That's what I have in my daily driver 325i.
The Sports require shorter springs.
For E30s Bilsteins, the shock rebound/compression rates are either roughly
or exactly identical between HDs and Sports.

Why?
15" tire options are not much better then stock 14".
To get a decent selection of tires you need to go up to 16" size. By then
your comfy E30 ride is no more. I drove my E30 with 205/55/14 Kumhos on the
steet last summer and that was getting uncomfortable. 
Since your shocks are dead, start by replacing them with HDs or Sports and
shorter springs first. See how you like the new ride and take it from there.
