A few more E30 questions

I have a few more questions regarding my 1987 325is.
This weekend I attempted to replace my auxilary fan. The bolts that held
the old fan in place to the airconcitioning condensor were frozen. The
tight quarters did not allow me to get any leverage on the bolts. The
bottom line is that I had to cut the old fan out with aircraft sheers.
Unfortunately I still could not get the old bolts off of the condensor to
attach the new fan. I think I am going to have to take the a/c condensor
out to get the bolts off.
The Bentley's manual does not describe the procedure for taking out the
condensor. Can anyone advise me on how to drain the air conditioning fluid
and take out the condensor?
Second, upon the advice of many of you I am replacing my front rotors which
are probably warped (my wheel shakes when I hit the brakes). During the
process, should I take the opportunity to replace the brake fluid as well?
Third, in this month's version of Roundel magazine there is a picture of an
E30 in the lower right hand corner of the page. The car has two fog lights
attached to a piece of aluminum which seems to be attached to the car's
chassis. What is that thing and what is its purpose?
