I think you summed it up yourself...You realized that your throttle is no
longer an on/off switch like it was in your 318, and you're going to have to
learn to modulate the power that you have.  Ease down on the power when you
come into a corner.  As you get a feel for the power you can add it more
quickly, but you're learning that you're going to have to take some corners
at part throttle.  Isn't driving neat? so many variables to keep track of.

If you can get to a couple, autocrosses are a great place to play with
throttle modulation.  Just remember, you can play handling games at an
autocross (like rotating a car aggressively by lifting and overpowering),
that aren't going to be advisable at speed on a track.  Remember that
everything that might be comfortable in a parking lot at 30-60  mph has to
be done more subtly at 80.
