Stroker or Conversion (engine)

hi
it is time for me to make a decision
after christmas, i will begin on a new project -
either stroking my engine to 2.5 or 2.6 or swapping in the e36 M3 engine
what do you guys suggest???
Cost wise, the stroker is better, but how far can i go with the stroker 
engine?
if i do decide on the stroker engine, i will start by getting some cams first, 
followed by head work.
i will start looking around for places to do the work, any suggestions???
also, what duration for the cams???
one final question - what is the difference with a 3,5,7 angle valve job and 
how do they differ from a race head?
