IMHO, the first things you mention are a good start.
JC chip, cam gear, and the Motorsport airbox (stock on the later models,
find it used in the back of the roundel).  These three work fantastic
together.

Then, if you already have the oil pan baffle, I would go to a school.  You
will learn so much about your car, while driving it on the track, and by
talking to the people there (other students w/ same car, Instructors, and
others).  There is plenty of time down the road to do further upgrades.
First get to know your car, and check out all the other E30 M3's, and what
they have done.
