Jim C chip for 95 325is

Hi - I'm looking for some clarification about the Jim C chip for the
M50B25TU engine in my 1995 325is.

1. On http://www.bonnevillemotorwerks.com/bmwchips.html there are two chips
shown for this engine, one is an EWS chip - what is EWS and do I want it?

2. Does this chip remove the top speed limiter (it seems some do and some
don't)?  Do I care anyway - what does it go from (128??) to (140+??)?
