The gasket may not be absolutely flat, the head will do this when
fitted. The oil rings however, are very important and must fit the
holes. This is a common problem, the O-rings get out of place when
tampering with the head.

I use only Heinz/Goetze gaskets. They are just a few $ more than
the original Alfa, and are in stock with most vendors. Try
