If you want to see a picture of a dual-acting (aka. reverse-poppet) thermostat, look at this page from NAPA's site:

A dual-acting thermostat has an extra disk at the bottom that moves with the
main valve.  When the thermostat is open, the lower disk is extended to
close the bypass.
