So if 10.4 pistons raise compression to 10.4 on a stock head,
and 10.1 pistons raise the compression to 10.1 on a stock head,
how much does the shaving of the head raise the compression?

Approximate values, obviously. Leaving out any intake mods that
would affect the intake volume.
