Sounds like clutch-judder (at least, that's all I've ever heard it called here in NZ).  Basically, your clutch and flywheel are too sticky when only partial pressure is being applied, so they're binding, releasing, binding, releasing, et cetera, giving the juddering effect.  Tends to happen when a clutch disc is replaced with another clutch disc of different friction material, and without resurfacing the flywheel.  The friction material from the old clutch disc is fractionally embedded in the surface of the flywheel, and is incompatible with the new friction material.  Resurfacing the flywheel removes the old friction material from the surface, and  gives a clean base for the new friction material to bond to, and thereafter a smooth clutch action.
