       I always have a the head cut a bit when I have the valves ground.  
That is often easier than cleaning all the old gasket off.
       If you cannot see any remaining gasket material, you are probably all 
right.  But do buy a long straight edge and make sure the head is completely 
flat.  That is the other reason for having the head surfaced.
       Now if you want more compression, have it cut 0.025 or more.  Just be 
careful you do not get too thin.  A stock Alfa head measures 4.41 inches or 
112 mm tall.
