engine upgrade



I've decided to build an engine for my 1967 GTV - plan is to buy a used
one, do a full rebuild and  then swap it in and thus stay roadworthy for
the max time. 

But..what type of engine to build? Currently my car has a 1750 engine. I
want to build a fast road engine (definitely no racing) - so I'm
thinking (since there's no substitute for cubes) that a 2000 engine
would be a worthwhile improvement. 

Questions:-

Will I be able to buy an exhaust that will fit both the taller 2000
engine and go around the under-floor pedals/master-cylinder?

If I get a 2000 engine/tranny combo is it best to modify the clutch to
be mechanically operated or modify my clutch pedal to operate a
master/slave hydrauliuc setup - I don't mind modification but I don't
want to do much fabrication.

the engine spec - I read the Kartalamkis book, expecting to get a
sensible overview of what to build - but his build spec seems pretty
wild - straight to 12mm cams etc. Is his spec over the top? Where is a
good place to look for sensible specs that work well on the street?
