Floppy engine mounts

All this recent discussion of tired engine mounts on fours is well-timed.
I just bought a '78 Alfetta, which has the following symptoms:

 - clonk when starting (sometimes), sounds like the exhaust hitting
   something.
 - rough, vibratory idle

This has an electric fan and apparently enough hood clearance to avoid
the usual clearance problems associated with soggy engine mounts, so
I can't use those tests. The mounts *look* OK (no obvious cracks),
but I can move the engine around by hand. I presume the mounts are,
in fact, worn out?

As for replacement, having not done that before, I presume a good
floor jack under the sump of an otherwise fully connected engine is
a reasonable procedure? Fit jack, unbolt mounts, raise engine, swap
mounts, bolt in new mounts, lower jack.
