sounds to me like a stuck thermostat...

the overflow tane's empty probablybecause as soon as it is cooling, they
get sucked back in. You definitely lost coolant... but i believe
car did not over heat by loss of coolant, but the overheat causes
coolant loss.

did the fan ever come on?

I think often a thermostat failure is that the engine colant temp sensor
says over heat, while the radiator fan remain shut because the hot
coolant didn't get to flow to the radiator. There are times that
the radiator fan do kick up because the thermostat is semi open..
enough to bring the fan up but not quiet enough to cool the engine.
