Ray Henderson's magnificent recipe (I can hardly wait to try it, celery and 
all..) leaves out one important procedure and a required accessory: a piece 
of unused clear plastic tubing for sucking out the heavenly marrow lodged in 
the hole in the center of the bone. This is the raison d'etre of the dish.
