[alfa] grinding stems

mike, you want correct shims.  the only times i have ground stems is
when shims were less than 45.  you never go below the bottom of the
chamfer at the very top.  i have a full set of shims;  holler if you
don't have access in nz.

new valves are the way to go, and correct depth ex guides.  experience
in alfa headwork is highly desirable;  other machine shops?
