Yes, oil can easily foul the sensor.  The typical failure mode of an O2
sensor is slow response where it won't oscilate to the ECU as it should.  On
a race car, open up the TPS and short it to WOT forcing the car into
open-loop mode all the time and bypassing the O2 sensor totally.
