The charging system runs through the stock ammeter out of necessity.

Yes, it is highly suggested to bypass the ammeter if you change to a
voltmeter. When you are bypassing it, bypass it all the way outside
the bulkhead connector in the engine compartment. Then you can run a
heavy duty wire into the truck to feed it power.  That can solve a lot
of potential gremlins, low voltage problems and fire hazards.
