BTDT. With the 225/50s on 15s, I used a die grinder to grind off the fender
lip. You can take it down to the spot welds. Its important to reseal the
bare metal edges, and to keep a close vigil aftrewards, or they'll rust.

I wouldn't do it. I have rubbed even the rolled fenders on my car at times
on the track. I would much prefer to be rubbing a big dull rolled edge at
over 100 MPH in turn 1 at RA than have the tire sliced open on a nicely
sharpened edge. BTW, you really can't see the paint if it does crack unless
you get down to that level to look.
