Filling an Alfa manual transmission/differential & a Duetto question

Fellow Alfisti,

This may be a really stupid question, but what is the proper way to
fill and Alfa transmission and differential?  

Way back when, a friend suggested that I simply drain the fluid, and
then without measuring, fill the tranny (or diff) until the fluid runs
out the filler hole...

I cannot wait to hear the responses!

Also, is it possible to change the front and rear brake rotors on a '67
Duetto to accommodate the Campy five star "Daytona" style rims? Other
suggestions?
