how to check an engine

Hi folks!
I just picked up another project GTV6 this weekend. This time it is
a very nice '84 model that the previous owner drove over two curbs and tore
the oil pan off of (while racing a GTI, he won btw;) I've got the car in my
yard and am ready to start putting it back together, but I am wondering how
I should check the engine. The oil pan and lower half of the oil pump are
completely gone and the car has been sitting outdoors for the last two
years, but looks quite clean visually fwiw.
Can I just replace the oil pump and pan and try starting it or
should I pull the engine and clean and inspect it all first? I'm not sure
what to look for in an engine that has not been run in a while. Any
favorite web sites dedicated to reviving old engines/motors?
Also, will milano oil pans fit a GTV6? The catalogs list different
part# for the upper pan gaskets. Anyone have a cheap upper/lower oil pan or
low milage oil pump for sale?
